From high up in the Vóila plateau in eastern Crete, this is a strikingly clean and coastal expression of Greece’s signature white grape. Assyrtiko is known for its bracing acidity and mineral edge — and this one has both in spades.

Expect citrus peel, sea salt, and a bit of green almond. It’s tight, textural and zippy, with a mouthwatering finish that makes it very hard to put down. Pair with grilled fish, salty cheeses, or just a sunny afternoon.
