Ancre Hill is a name you’ll want to remember. Owned by Richard and Joy Morris and based in Monmouthshire, Wales, this estate is doing something remarkable—farming biodynamically, a method that goes far beyond organic. That means no synthetic chemicals, but also working with natural cycles (think lunar calendars, compost teas, and biodiversity) to coax the best from the vines and the land. It’s a deeply hands-on and holistic way of growing grapes, and doing it in Wales, with its challenging weather, is nothing short of bold.

This traditional method sparkling is from the exceptional 2018 vintage and really shows what’s possible when ambition and care meet the right conditions. Fermented in both old oak barrels and concrete eggs, then aged on lees for extended time, the wine has developed a fine texture and real depth. It’s zero dosage (so no sugar added at bottling), but don’t let that scare you—it’s incredibly well balanced, with delicate citrus, green apple, a chalky edge, and hints of toasted almond and biscuit. With just 10.5% alcohol, it’s feather-light and refreshing, but still full of character.
